I love this Pork and Plum Bowl recipe and make it often during the summer when plums are in-season. It is fast and easy. It is a single-dish meal. It is full of fruits, vegetables, and whole grains. And, most importantly, it is delicious.

This dish also makes an excellent baby food. I do not recommend blending the wheat berries, because it makes the texture gummy. Purée the topping to your desired consistency. Then, if desired, rough chop the wheat berries and add them to the puree.

If you do not eat pork, the recipe is equally delicious with ground turkey.

Pork and Plum Bowl

TOPPING

3-5 Carrot, diced

2-4 Celery, diced

1 Onion, diced

5-6 Plum, diced

1 pound Ground Pork

2 cups Chicken Broth

1/4 cup White wine or sherry (optional)

BASE

2 cups Wheat Berries

Prepare wheat berries. After cooking, to add flavor, coat very lightly with butter, ghee, coconut oil, or extra virgin olive.

Heat dutch oven over medium heat. Add 2-3 tablespoons oil. (I typically use coconut oil or extra virgin olive oil + butter.)

Add pork and allow to sit undisturbed for 2-4 minutes until the underside begins to brown. Stir the pork and add carrot, onion, and celery. Allow to sit undisturbed for 2-4 minutes until the underside is golden brown. Stir and repeat this step 1-2 more times. Add plum to mixture and continue browning step 1-2 more times. Deglaze the bottom of the dutch oven with white wine or sherry (optional) and reduce by half. Add chicken broth and scrape the remaining brown bits. (For baby food, cool, transfer to a blender, and blend to desired consistency).

Note, if you eliminate the white wine or sherry, use chicken broth to deglaze the dutch oven.

Top wheat berries with pork mixture and serve.
