How to Choose a Ripe Avocado
The foundation of guacamole is the avocado, and the best guacamole demands perfectly ripe avocados … so you have about an hour to use your avocado before it starts turning brown. I jest, but we’ve all been there. I have a trick for selecting ripe avocados that will change your life (or at least your grocery shopping). When choosing an avocado, inspect the stem. If there is no stem, put that avocado back where it came from. Once you’ve found an avocado with a stem still attached, inspect the avocado for soft spots. If the avocado passes visual inspection, gently squeeze the fruit. If the avocado is firm, you’ll need another day or two to achieve peak ripeness. If the avocado yields ever so slightly to gentle pressure, the avocado is ready for use immediately.

Chunky Guacamole


- 1 lime
- 1/3 bunch cilantro, finely chopped
- 1/2 pint cherry tomatoes, diced
- 1 jalapeno
- 1/2 small red onion, diced
- 2-3 ripe avocados
- Pinch of kosher salt
Add zest from 1 lime to bowl. Cut lime in half and add juice. Add cilantro, cherry tomatoes, and red onion.
Slice jalapeno in half along the long-side. To make mild-spice guacamole, remove the membrane and the seeds from both halves by scraping the inside of the pepper with a spoon. To make medium-spice guacamole, remove the membrane and the seeds from one half by scraping the inside of the pepper with a spoon. To make hot-spice guacamole, leave the membrane and seeds intact. Finely dice the jalapeno and add to the bowl.
Add avocados until you reach the ratio of avocado to ingredient that you prefer.
Add kosher salt to taste.
